I learned this recipe from my mom. I like it because the colour of the food looks beautiful and it tastes amazing. I believe Zereshk polo is one of the best Persian foods. If we consider Persian foods like a crown, Zereshk polo will be that shiny and beautiful diamond on top of the crown.
It is easy to make and really beautiful when it is served. The thing I like the most about cooking with others is to share cultures and tastes from various parts of the world.
1. Grind the saffron threads. Sprinkle the ground saffron in a glass with ice cubes.
2. Set the oven to 180°C and marinate the chicken drumsticks with turmeric, black pepper, salt, and sliced onion and bell pepper. Cook for 30 minutes.
3. Cook rice according to the package.
4. Put half of the rice in a bowl, add the saffron water and mix it up, so it gets a nice yellow colour. Put the other white rice on a serving plate and put the saffron rice on top of it.
5. Rinse the dried barberries in a sieve and let them drain dry.
6. Heat vegetable oil in a small pan at medium heat. Add the barberries and sugar to it and stir swiftly for about 1 minute.
7. Decorate the rice with caramelised barberries.
